[140] Black Bean Burger Salad

Wednesday afternoon, Dustin and I went to Chili's for lunch. I ordered their Avocado Burger with a black bean burger substitute, and only managed to devour half of the burger (in addition to my fries, coleslaw, and splitting a bottomless tostada chip appetizer. Mmm, it was so good!).

For dinner I decided to make a salad using the rest of my burger as an ingredient. And so we have...

LEFTOVER BLACK BEAN BURGER SALAD




  • Spinach and Arugala
  • Grape Tomatoes
  • Broccoli Slaw
  • Crumbled Feta
  • Leftover Black Bean Avocado Burger
  • Newman's Own Lite Raspberry & Walnut Dressing

[055] Dinner, minus the movie

I really enjoy cooking. Often times I'll find myself spending hours on a meal. Even if it's just for two people. :] This particular dinner didn't take that long to make. 

Wednesday (August 10th) nights dinner.
(My dinner) Salmon baked with olive oil, sea salt, and peppercorn melange.
Salad with red leaf lettuce, cucumbers, tomatoes, and red onion.
One hard boiled egg and one slice of buttered toast.
I try not to eat fish too often, but when I do it's usually salmon, tuna, or tilapia.I love a nice salmon. Some people prefer their fish without the skin, but I will eat mine either way.

(Boyfriends dinner) Chicken baked with olive oil, soy sauce, sea salt, peppercorn melange, garlic powder, and onion powder.
Salad with red leaf lettuce, cucumbers, red onion, and mozzarella.
One hard boiled egg and one slice of buttered toast.

We used Newman's Own Caesar Dressing on our salads. By far the best caesar dressing I've ever tasted.

I used my toaster oven to cook the chicken and salmon. Placing parchment paper under the salmon and chicken really helps keep them from sticking to the foil.

[045] Fruits and Salads, but not Fruit Salad


Mango Avocado Salad with Raspberry Walnut Dressing

(That sounds like a good name!)

1 cup  Spinach
1/3 cup  Broccoli Slaw
1/2  Avocado (cubed)
1/4 cup  Tomato (cubed)
1/4 cup  Cucumber (cubed)
1/3 cup  Mango (seeded, peeled, cubed)
Fresh cracked pepper (optional)
Those measurements are approximate.

1. Arrange spinach on a plate. Add broccoli slaw (if you don't want to measure out 1/3, just grab a small handful).
2. In a small bowl (or container with lid), add avocado, tomato and cucumber. Mix well before adding desired amount to the plate.
3. Drizzle with the light raspberry and walnut dressing. Finish with a sprinkle of cracked pepper (optional).

Pour yourself a glass of wine (or if you're me, Crystal Light's peach mango green tea). Enjoy!
