[055] Dinner, minus the movie
I really enjoy cooking. Often times I'll find myself spending hours on a meal. Even if it's just for two people. :] This particular dinner didn't take that long to make.
Wednesday (August 10th) nights dinner.
(My dinner) Salmon baked with olive oil, sea salt, and peppercorn melange.
Salad with red leaf lettuce, cucumbers, tomatoes, and red onion.
One hard boiled egg and one slice of buttered toast.
I try not to eat fish too often, but when I do it's usually salmon, tuna, or tilapia.I love a nice salmon. Some people prefer their fish without the skin, but I will eat mine either way.(Boyfriends dinner) Chicken baked with olive oil, soy sauce, sea salt, peppercorn melange, garlic powder, and onion powder.
Salad with red leaf lettuce, cucumbers, red onion, and mozzarella.
One hard boiled egg and one slice of buttered toast.
We used Newman's Own Caesar Dressing on our salads. By far the best caesar dressing I've ever tasted.
I used my toaster oven to cook the chicken and salmon. Placing parchment paper under the salmon and chicken really helps keep them from sticking to the foil.

[054] Play Dress-up
On a normal Friday, I spend some part of my day at work. Usually on the closing shift, which means my boyfriend has to find his own dinner. Then there's the rare Friday which I am not scheduled to work at all. Today happens to be that rare Friday.
I spent my morning watching Buffy season 4. I'm on a huge Buffy kick right now. Huge thanks to Netflix for kindly making all season available for instant queue. An even bigger thanks to Katie (bff's wife) and Regina (bff's sister) for really getting me interested in watching the TV series. I didn't watch much TV back in the late 90's/early 00's.
Over the last week, I have been meaning to take new pictures for my blog. While I absolutely love the picture from my family reunion, I felt as if I needed something new. So I decided it was time to take advantage of my day off and get these pictures done. (Even though I haven't worked since Tuesday.)
I grabbed my curlers, make-up bag and mirror, and sat down to watch more Buffy. After an hour I wanted to take my curlers out, although I knew there wouldn't be much of a curl to my hair. I grabbed a can of hairspray and went to work on each section. I lightly applied hair spray to each section before unraveling. As I unrolled each section, I sprayed a little more hairspray to try and keep a nice wave.
The wave held long enough to take pictures. As soon as I sat down to upload and write, my hair went mostly flat. No worries, I don't have plans. It's just me and Buffy tonight. The boyfriend is going to be having bro time with his bestie. Home alone with my scrapbooks and Netflix. I just might make a quick trip to Wal-mart for some groceries.
[053] PB and J Forever
I love peanut butter. Creamy, not crunchy! Lately I've found myself eating more and more PB and J's. Especially when I run out of fresh veggies to munch on. Sad face!
I recently bought a jar of low sugar Smucker's strawberry preserves. Today, I finally opened that jar of delicious strawberry preserves and I don't want to turn back! I'm not usually one to switch to low/no sugar alternatives but I figured I would give this one a shot. I'm glad I did!
If you're a fan of large chunks of fruit in your preserves, this is for you. With only 25 calories and 5g of sugar per serving (1Tbsp) you won't feel guilty about eating one (or two... or three) servings worth.
When I make a sandwich, I'm not afraid to use the "hill" or end piece of the loaf. Some people 100% refuse to eat that piece of bread. What a bunch of babies. Anyway. Let's discuss sandwich construction.
Ingredients:
3 slices of bread
peanut butter
jelly/jam/preserves
1. Take two slices of bread and evenly spread a good amount of peanut butter on each. Set aside.
2. Take the third slice of bread and evenly spread your jelly/jam/preserve of choice. Place jelly side down on one of the peanut buttered slice. On the un-jellied side of your jellied bread, evenly spread jelly on that side as well.
3. Finally, place your second piece of peanut buttered bread on your newly jellied slice. Your jelly slice should now be hugged by a slice of peanut buttered bread on either side. Mmm nice and peanut buttery goodness surrounding little jelly slice.
4. Optional, slice your bread in half or diagonal. Or you can show your sandwich who's boss and dive right in.
On a side note: I absolutely hate when jelly gets into my peanut butter jar. Bleh. Keep it clean, people!
